Brewing beer at home is a process where almost everything depends on numbers: weights of grain and hops, volumes of water, temperatures at each stage and the density readings that track fermentation. Approximation produces inconsistency that is impossible to diagnose.
Why Weight Rather Than Volume
Malt, whether whole grain or extract, is measured by weight because volume varies with crush and density. Hops are measured by weight because their volume tells you nothing about the quantity of the compounds that matter.
Hops in particular are used in small quantities where accuracy counts. A recipe calling for twenty-five grams of a bittering hop is meaningfully different from thirty, and the difference is tasteable in the finished beer.

The Temperatures That Define the Beer
- Mash temperature, around 63 to 70°C, which determines fermentability and body
- Mash-out, around 76°C, to stop enzyme activity
- Sparge water, around 76°C, to rinse the grain efficiently
- Pitching temperature, which varies by yeast strain and matters considerably
- Fermentation temperature, which affects the flavour compounds the yeast produces
Mash Temperature Is the Big One
A mash at the lower end of the range produces more fermentable sugars, which gives a drier, thinner beer with higher alcohol. A mash at the higher end leaves more unfermentable sugars, producing a fuller, sweeter beer with less alcohol.
A difference of two or three degrees is genuinely noticeable in the finished product, which is why brewers obsess about it and why a reliable thermometer is basic equipment rather than a refinement.
Fermentation Temperature
Yeast produces different flavour compounds at different temperatures. Ale yeast fermented too warm produces fusel alcohols and estery, sometimes solventy flavours; fermented too cool it may stall.
Controlling fermentation temperature is frequently cited as the single biggest improvement available to a home brewer, ahead of ingredient quality or equipment.
Gravity Readings
Specific gravity, measured with a hydrometer or refractometer, tracks the sugar content before and after fermentation. The difference gives the alcohol content and confirms fermentation has finished.
Two consecutive readings the same, a few days apart, is the standard indication that fermentation is complete and the beer can be packaged. Bottling early is how bottles explode, which is a genuine hazard rather than a theoretical one.
Record Everything
Weights, temperatures, times, gravity readings and tasting notes. Brewing is a process with many variables and a long feedback loop, which makes it impossible to improve without records.
A batch that turned out well cannot be reproduced from memory, and one that turned out badly cannot be diagnosed. The notebook is as much a piece of equipment as the kettle.
